What you will see
When scanning to e-mail, you cannot set a Cc and/or Bcc recipient from the Address Book > Shortcuts list. The selection defaults to “To”, unless you type the Cc or Bcc recipient’s e-mail address manually.
NOTE: Make sure Cc/Bcc option is enabled on the printer’s Embedded Web Server (EWS) > Settings > E-mail/FTP Settings > E-mail Settings > Use cc:/bcc:.

Update the printer’s firmware to PE release code P565 or higher.

Fix information
The new firmware code allows you to set the recipient’s e-mail address as Cc or Bcc after the e-mail shortcut is selected and loaded from the Address Book > Shortcuts list (i.e., press the up arrow to highlight the e-mail, and then select either Cc or Bcc).
